You may already know this since you said you're already finishing up the pack, but building a 1.7 pack is a bit of a pain compared to more recent versions because it doesn't automatically fix biome/enchant/potion ID conflicts. I would also recommend adding Electricraft and Reactorcraft from the same developer if you're interested in Rotarycraft, they're really meant to be played together. They're already mentioned in this thread, but Rotarycraft and Chromaticraft are both great and still being actively developed. Thaumic Expanse (which is available through the link above) isn't available on Curseforge, but it's a lifesaver for viewing the Thaumonomicon. I wouldn't bother with the forked versions he lists - either stick to the versions on Curseforge or grab the forks from GTNH instead.

I'd add pretty much everything down through the "good" tier plus Thaumic Exploration (plus whatever else catches your eye). If you're going to include Thaumcraft (and I definitely recommend it because the 1.7 version is arguably the best version), take a look at this list of addons. The 1.7 version of Foamfix fixes a lot of bugs, most notably the boat desync bug (which is incredibly annoying if you're used to playing more recent Minecraft versions).
